These No Bake Salted Caramel Cookies are chewy, sweet, and perfectly salty treats that come together quickly without the need for an oven—perfect for warm days or last-minute cravings.
Ingredients
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter
- 1/2 cup whole milk
- 1/2 teaspoon kosher salt
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- Flaky sea salt, for sprinkling on top
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium saucepan over medium heat, combine granulated sugar, brown sugar, butter, milk, and kosher salt. Stir continuously until the mixture comes to a boil.
- Once boiling, let the mixture boil for exactly 1 minute without stirring.
- Remove the saucepan from heat and stir in the peanut butter and vanilla extract until smooth.
- Add the oats and mix until well combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet using a spoon or cookie scoop.
- Sprinkle each cookie with a pinch of flaky sea salt while still soft.
- Let the cookies cool at room temperature for 20–30 minutes until set.
Notes
- For a nutty variation, use almond butter instead of peanut butter.
- Add 1/4 cup of mini chocolate chips for a chocolatey twist.
- Old-fashioned oats can be used for a chewier texture.
- Drizzle with melted dark chocolate for added decadence.
- Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 10 days.
