Description

These No Bake Salted Caramel Cookies are chewy, sweet, and perfectly salty treats that come together quickly without the need for an oven—perfect for warm days or last-minute cravings.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup whole milk
  • 1/2 teaspoon kosher salt
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • Flaky sea salt, for sprinkling on top

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, butter, milk, and kosher salt. Stir continuously until the mixture comes to a boil.
  3. Once boiling, let the mixture boil for exactly 1 minute without stirring.
  4. Remove the saucepan from heat and stir in the peanut butter and vanilla extract until smooth.
  5. Add the oats and mix until well combined.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet using a spoon or cookie scoop.
  7. Sprinkle each cookie with a pinch of flaky sea salt while still soft.
  8. Let the cookies cool at room temperature for 20–30 minutes until set.

Notes

  • For a nutty variation, use almond butter instead of peanut butter.
  • Add 1/4 cup of mini chocolate chips for a chocolatey twist.
  • Old-fashioned oats can be used for a chewier texture.
  • Drizzle with melted dark chocolate for added decadence.
