A hearty one-pan meal featuring tender chicken, smoky bold barbecue sauce, sweet honey, and perfectly seasoned rice cooked together for a flavorful and easy weeknight dinner.
Ingredients
- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 1 cup long-grain white rice, uncooked
- 1 ½ cups chicken broth
- ¾ cup bold barbecue sauce
- ¼ cup honey
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup diced red bell pepper
- ½ cup diced onion
- ½ cup shredded cheddar cheese (optional)
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- Heat the olive oil in a large deep skillet or pan over medium heat.
- Season the chicken pieces with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Add the chicken to the pan and cook for 4–5 minutes until lightly browned.
- Stir in the diced onion and red bell pepper and cook for 2–3 minutes until slightly softened.
- Add the uncooked rice to the pan and stir to coat in the flavors.
- In a bowl, mix together the chicken broth, barbecue sauce, and honey. Pour the mixture into the pan.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes.
- Sprinkle shredded cheddar cheese on top if desired and allow it to melt.
- Garnish with fresh parsley and serve warm.
Notes
- For extra richness, substitute chicken thighs for chicken breast.
- Add red pepper flakes or diced jalapeño for heat.
- Mix in corn or black beans for added texture.
- If using brown rice, increase cooking time by 15–20 minutes and add an extra ¼–½ cup broth.
