Description

A hearty one-pan meal featuring tender chicken, smoky bold barbecue sauce, sweet honey, and perfectly seasoned rice cooked together for a flavorful and easy weeknight dinner.


Ingredients

  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1 cup long-grain white rice, uncooked
  • 1 ½ cups chicken broth
  • ¾ cup bold barbecue sauce
  • ¼ cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup diced red bell pepper
  • ½ cup diced onion
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Heat the olive oil in a large deep skillet or pan over medium heat.
  2. Season the chicken pieces with salt, pepper, smoked paprika, garlic powder, and onion powder.
  3. Add the chicken to the pan and cook for 4–5 minutes until lightly browned.
  4. Stir in the diced onion and red bell pepper and cook for 2–3 minutes until slightly softened.
  5. Add the uncooked rice to the pan and stir to coat in the flavors.
  6. In a bowl, mix together the chicken broth, barbecue sauce, and honey. Pour the mixture into the pan.
  7. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  8. Remove from heat and let sit covered for 5 minutes.
  9. Sprinkle shredded cheddar cheese on top if desired and allow it to melt.
  10. Garnish with fresh parsley and serve warm.

Notes

  • For extra richness, substitute chicken thighs for chicken breast.
  • Add red pepper flakes or diced jalapeño for heat.
  • Mix in corn or black beans for added texture.
  • If using brown rice, increase cooking time by 15–20 minutes and add an extra ¼–½ cup broth.
  • Store leftovers in an airtight container for up to 4 days or freeze for up to 2 months.
