A quick and flavorful one-pan dish combining tender chicken, fluffy rice, and a sweet-smoky honey BBQ sauce, perfect for busy weeknights with minimal cleanup.
Ingredients
- 1 lb (450 g) boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce (your favorite variety)
- 2 tbsp honey
- 1 tbsp oil for sautéing
- Salt and pepper to taste
- Optional seasonings: 1 tsp garlic powder, 1/2 tsp smoked paprika
- Optional vegetables: 1 cup frozen mixed veggies or 1 diced bell pepper
- Optional garnish: chopped green onions or parsley
Instructions
- Season chicken with salt, pepper, and optional seasonings.
- Heat oil in a large skillet over medium-high heat and sear chicken on both sides until lightly browned; remove and set aside.
- Add rice to the same skillet and toast for 1–2 minutes, stirring often.
- Pour in chicken broth, BBQ sauce, and honey; stir to combine.
- Return chicken to the pan, nestling it into the rice.
- Cover and reduce heat to low; simmer for 20–25 minutes until rice is tender and chicken is cooked through.
- If adding vegetables, stir them in during the last 5 minutes of cooking.
- Remove from heat, let rest for 5 minutes, then fluff rice and garnish before serving.
Notes
- For leaner meat, use chicken breasts but reduce cooking time slightly to avoid dryness.
- To prevent soggy rice, toast it before adding liquid and avoid lifting the lid while simmering.
- Adjust BBQ sauce sweetness or spice level to taste by adding more honey or hot sauce.
