Description

A quick and flavorful one-pan dish combining tender chicken, fluffy rice, and a sweet-smoky honey BBQ sauce, perfect for busy weeknights with minimal cleanup.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce (your favorite variety)
  • 2 tbsp honey
  • 1 tbsp oil for sautéing
  • Salt and pepper to taste
  • Optional seasonings: 1 tsp garlic powder, 1/2 tsp smoked paprika
  • Optional vegetables: 1 cup frozen mixed veggies or 1 diced bell pepper
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Season chicken with salt, pepper, and optional seasonings.
  2. Heat oil in a large skillet over medium-high heat and sear chicken on both sides until lightly browned; remove and set aside.
  3. Add rice to the same skillet and toast for 1–2 minutes, stirring often.
  4. Pour in chicken broth, BBQ sauce, and honey; stir to combine.
  5. Return chicken to the pan, nestling it into the rice.
  6. Cover and reduce heat to low; simmer for 20–25 minutes until rice is tender and chicken is cooked through.
  7. If adding vegetables, stir them in during the last 5 minutes of cooking.
  8. Remove from heat, let rest for 5 minutes, then fluff rice and garnish before serving.

Notes

  • For leaner meat, use chicken breasts but reduce cooking time slightly to avoid dryness.
  • To prevent soggy rice, toast it before adding liquid and avoid lifting the lid while simmering.
  • Adjust BBQ sauce sweetness or spice level to taste by adding more honey or hot sauce.
