This One Pot Cheesy Taco Pasta is a hearty, flavor-packed fusion of taco night and creamy pasta, perfect for busy weeknights with minimal cleanup.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp taco seasoning
- 2 tbsp tomato paste
- 1 (14.5 oz) can diced tomatoes (with juices)
- 8 oz uncooked pasta (such as shells or rotini)
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 4 oz cream cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Sauté diced onion until soft, then add minced garlic and cook until fragrant.
- Add ground beef and cook until browned, draining excess grease if necessary.
- Stir in taco seasoning and tomato paste, coating the beef evenly.
- Pour in diced tomatoes (with juices), uncooked pasta, and beef broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is cooked and liquid is mostly absorbed.
- Stir in cream cheese and shredded cheddar cheese until melted and creamy.
- Remove from heat and let sit for a few minutes to thicken before serving.
