Description

This One Pot Cheesy Taco Pasta is a hearty, flavor-packed fusion of taco night and creamy pasta, perfect for busy weeknights with minimal cleanup.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 2 tbsp tomato paste
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 8 oz uncooked pasta (such as shells or rotini)
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Sauté diced onion until soft, then add minced garlic and cook until fragrant.
  3. Add ground beef and cook until browned, draining excess grease if necessary.
  4. Stir in taco seasoning and tomato paste, coating the beef evenly.
  5. Pour in diced tomatoes (with juices), uncooked pasta, and beef broth. Stir to combine.
  6. Bring to a boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is cooked and liquid is mostly absorbed.
  7. Stir in cream cheese and shredded cheddar cheese until melted and creamy.
  8. Remove from heat and let sit for a few minutes to thicken before serving.
