Thick, chewy Peanut Butter Blondies with rich peanut butter flavor, made in one bowl with simple ingredients. Perfect for quick desserts or gatherings.
Ingredients
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup peanut butter chips or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the melted butter and brown sugar until smooth.
- Add the peanut butter and mix until fully combined.
- Beat in the egg and vanilla extract.
- Stir in the flour, baking powder, and salt until just combined. Do not overmix.
- Fold in peanut butter or chocolate chips, if using.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until the edges are set and the center looks slightly underdone.
- Let the blondies cool in the pan before slicing into squares.
Notes
- Add chopped roasted peanuts on top for extra crunch.
- Swap peanut butter chips with chocolate chips for a flavor twist.
- Browned butter adds richer flavor.
- Swirl in raspberry jam for a PB&J twist.
