Description

Thick, chewy Peanut Butter Blondies with rich peanut butter flavor, made in one bowl with simple ingredients. Perfect for quick desserts or gatherings.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup peanut butter chips or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth.
  3. Add the peanut butter and mix until fully combined.
  4. Beat in the egg and vanilla extract.
  5. Stir in the flour, baking powder, and salt until just combined. Do not overmix.
  6. Fold in peanut butter or chocolate chips, if using.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 25–30 minutes, or until the edges are set and the center looks slightly underdone.
  9. Let the blondies cool in the pan before slicing into squares.

Notes

  • Add chopped roasted peanuts on top for extra crunch.
  • Swap peanut butter chips with chocolate chips for a flavor twist.
