Description
Peanut Butter S’mores Sandwich Cookies combine the nostalgic flavors of campfire s’mores with soft, chewy peanut butter cookies, filled with gooey marshmallow and melty chocolate.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup mini marshmallows or 1 jar marshmallow creme
- 6 oz milk chocolate bars or chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the peanut butter, butter, granulated sugar, and brown sugar until creamy.
- Mix in the eggs until the batter is smooth.
- Stir in the flour, baking soda, and salt until just combined.
- Scoop dough into small portions, roll into balls, and place on the baking sheet, pressing them down slightly.
- Bake for 8–10 minutes, until the edges are just set.
- Cool cookies completely on a wire rack.
- Spread marshmallow creme or place mini marshmallows on the flat side of one cookie, top with chocolate, and sandwich with another cookie.
- For extra gooey texture, microwave the sandwich for a few seconds or warm in foil in the oven briefly.
Notes
- Do not overbake the cookies to keep them soft and chewy.
- Mini marshmallows can be toasted for a more authentic s’mores experience.
- Try variations like dark or white chocolate or almond butter for different flavors.
- Store in an airtight container at room temperature for 3 days, or refrigerate/freeze for longer storage.
