Ingredients
- 1 cup shelled pistachios (unsalted, finely chopped)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/2 cup chopped pistachios (extra for topping or mixing in)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- In another bowl, mix eggs, buttermilk, oil, vanilla extract, and almond extract until smooth.
- Gradually combine wet and dry ingredients, stirring until just incorporated.
- Fold in chopped pistachios evenly.
- Pour batter into prepared loaf pan and sprinkle extra pistachios on top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a rack to cool completely.
Notes
- Avoid overmixing to keep the bread soft and tender.
- Add a powdered sugar glaze for extra sweetness if desired.
- White chocolate chips can be added for a richer variation.
- Lemon zest adds a fresh citrus twist.
