Description

Poor Man Husband Casserole is a budget-friendly, hearty layered dish made with ground beef, pasta, tomato sauce, and a creamy cheese mixture. It’s a comforting and easy-to-make family favorite perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 24 oz tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz egg noodles or rotini
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with chopped onion and minced garlic until the meat is no longer pink. Drain any excess grease.
  3. Stir in the tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5-10 minutes.
  4. Cook the pasta according to package instructions until al dente. Drain and set aside.
  5. In a bowl, combine softened cream cheese and sour cream until smooth.
  6. Layer half the pasta in a greased baking dish, spread half the cheese mixture, then half the meat sauce. Repeat the layers.
  7. Top with shredded cheddar cheese.
  8. Bake uncovered for 20-25 minutes, until bubbly and golden on top.
