Description
These Roasted Cherry Brownies combine rich, fudgy brownies with the sweet and slightly tart flavor of roasted cherries, creating a decadent dessert with a unique twist.
Ingredients
- 1 cup (2 sticks) unsalted butter
- 8 oz dark chocolate, chopped
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1 1/2 cups fresh cherries, pitted and halved
- 1 tbsp olive oil or melted butter (for roasting cherries)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking dish (preferably 9×9 inches) by lining it with parchment paper or greasing it lightly.
- Spread the halved cherries on a baking sheet, drizzle them with olive oil or melted butter, and roast in the preheated oven for about 15 minutes, or until softened and caramelized. Set them aside to cool.
- While the cherries roast, melt the butter and dark chocolate together in a heatproof bowl over simmering water or in the microwave in 30-second intervals, stirring in between.
- In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth and slightly frothy.
- Gradually add the melted chocolate mixture to the sugar and egg mixture, stirring until fully combined.
- Sift in the flour, salt, and baking powder, mixing just until incorporated. Be careful not to overmix.
- Gently fold in the roasted cherries, reserving a few for topping if desired.
- Pour the brownie batter into the prepared baking dish and spread it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Let the brownies cool completely before cutting them into squares.
Notes
- If desired, add chopped walnuts or almonds for a crunchy contrast.
- Substitute frozen cherries for fresh, making sure to thaw and drain them first.
- For a twist, try adding white chocolate chips or topping with melted white chocolate after baking.
