Description

These Roasted Cherry Brownies combine rich, fudgy brownies with the sweet and slightly tart flavor of roasted cherries, creating a decadent dessert with a unique twist.


Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 8 oz dark chocolate, chopped
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups fresh cherries, pitted and halved
  • 1 tbsp olive oil or melted butter (for roasting cherries)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish (preferably 9×9 inches) by lining it with parchment paper or greasing it lightly.
  2. Spread the halved cherries on a baking sheet, drizzle them with olive oil or melted butter, and roast in the preheated oven for about 15 minutes, or until softened and caramelized. Set them aside to cool.
  3. While the cherries roast, melt the butter and dark chocolate together in a heatproof bowl over simmering water or in the microwave in 30-second intervals, stirring in between.
  4. In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth and slightly frothy.
  5. Gradually add the melted chocolate mixture to the sugar and egg mixture, stirring until fully combined.
  6. Sift in the flour, salt, and baking powder, mixing just until incorporated. Be careful not to overmix.
  7. Gently fold in the roasted cherries, reserving a few for topping if desired.
  8. Pour the brownie batter into the prepared baking dish and spread it out evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Let the brownies cool completely before cutting them into squares.

Notes

  • If desired, add chopped walnuts or almonds for a crunchy contrast.
  • Substitute frozen cherries for fresh, making sure to thaw and drain them first.
