Ingredients
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 cup salsa (any kind—chunky, spicy, or mild depending on preference)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese (or a Mexican blend)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts in a lightly greased baking dish in a single layer.
- In a small bowl, mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Sprinkle the seasoning blend evenly over both sides of the chicken.
- Pour the salsa over the chicken, spreading it to ensure each piece is well coated.
- Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from oven and sprinkle shredded cheese on top of the chicken.
- Return to oven for 5 more minutes, until the cheese is melted and bubbly.
- Let it rest for 5 minutes before serving. Garnish with chopped fresh cilantro if desired.
