Description

Ingredients

  • 6 cups mixed salad greens (romaine, butter lettuce, or spring mix)
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice (or red wine vinegar)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash and thoroughly dry the salad greens, then place them in a large salad bowl.
