Description

Tender beef bites slow-cooked in a honey garlic sauce, served with rice or noodles and garnished with sesame seeds and parsley or scallions.

Ingredients

  • 1 tablespoon sesame oil
  • 2 pounds stew beef
  • 4 cloves garlic, minced
  • ½ cup honey
  • ½ cup ketchup
  • ½ cup low-sodium soy sauce
  • ½ teaspoon dried oregano
  • Sesame seeds (for garnish)
  • Fresh parsley or scallions (optional)
  • 1 tablespoon cornstarch (if needed for thickening)

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat and sear the stew beef until browned on all sides (you’re not cooking it through, just locking in flavor).
  2. Add the browned steak bites to the slow cooker.
  3. In a bowl, whisk together minced garlic, honey, ketchup, soy sauce, and oregano. Pour this mixture over the beef in the slow cooker and stir to combine.
  4. Cover and cook on LOW for 4 hours, or until the beef is tender.
  5. If the sauce gets too thick before the beef is tender, add ½ cup water to the slow cooker.
  6. If the sauce is too thin, mix 1 tablespoon cornstarch with ¼ cup water to form a slurry, then stir it into the sauce.
  7. Once the beef is tender and the sauce is the right consistency, garnish with sesame seeds and fresh parsley or scallions. Serve over rice (or noodles) and enjoy!

Notes

  • The beef will darken in color due to the soy sauce.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Every slow cooker runs differently; keep on LOW to avoid burning the honey. Some may take up to 6 hours.
