A simple, one-pot slow cooker meal featuring tender chicken and vegetables in a sweet-savory honey garlic sauce, tossed with noodles for a satisfying, no-fuss dinner.
Ingredients
- ½ cup diced onion
- 1½ lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 medium red bell pepper, sliced
- ½ cup honey
- ½ cup soy sauce
- ¼ cup ketchup
- 2 tsp sesame oil
- 4 cloves garlic, minced
- 3 tsp cornstarch
- 3 Tbsp water
- 1 lb cooked, drained spaghetti noodles
- Scallions or sesame seeds for garnish
Instructions
- Add the cubed chicken, diced onion, and sliced red bell pepper to the slow cooker.
- Whisk together honey, soy sauce, ketchup, sesame oil, and garlic, then pour over the chicken and veggies. Stir to combine.
- Cook on LOW for 6 hours or HIGH for 4 hours.
- Whisk together cornstarch and water, then stir into the slow cooker to thicken the sauce, if desired.
- Add the cooked spaghetti noodles and stir to coat in the sauce.
- Garnish with scallions or sesame seeds and serve.
Notes
- Chicken thighs can be used instead of chicken breasts.
- Customize with extra veggies like broccoli or carrots.
- Use other noodles or serve over rice or cauliflower rice.
- Add spice with red pepper flakes or sriracha.
- Store leftovers in fridge up to 3 days or freeze for 3 months.
