Description

A rich and creamy slow cooker dish combining juicy chicken with the bold flavors of street corn for an easy comforting meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups corn kernels (fresh or frozen)
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Optional: sliced jalapeños for heat

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add corn kernels evenly over the chicken.
  3. In a bowl, whisk together heavy cream, sour cream, mayonnaise, garlic, chili powder, paprika, lime juice, salt, and pepper.
  4. Pour the creamy mixture over the chicken and corn.
  5. Sprinkle the shredded cheddar and Parmesan evenly on top.
  6. Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is fully cooked.
  7. About 15 minutes before serving, shred the chicken in the slow cooker and stir to combine with the creamy sauce.
  8. Garnish with chopped cilantro and optional jalapeños.
  9. Serve warm with rice, tortillas, or over pasta.

Notes

  • You can use rotisserie chicken for a quicker version — add during the last hour of cooking.
  • Adjust the heat with more or less chili powder or jalapeños.
  • For extra creaminess, add a splash of chicken broth if needed.
