Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tablespoon lime zest
- 2 tablespoons fresh lime juice

- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup sweetened shredded coconut

- 2 tablespoons fresh lime juice (for frosting)
- 1 teaspoon lime zest (for frosting)
- 1–2 tablespoons milk, as needed for consistency
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lime zest, lime juice, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in the shredded coconut until evenly distributed.
- Spread the batter evenly into the prepared pan.
- Bake for 22–25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan.
- For the frosting, beat the softened butter until smooth.
- Gradually mix in the powdered sugar.
- Add the lime juice and zest, then mix until combined.
- Add milk a little at a time until a smooth, spreadable consistency is reached.
- Spread the frosting evenly over the cooled bars and chill slightly to set before slicing.
