Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 tablespoons fresh lime juice (for frosting)
  • 1 teaspoon lime zest (for frosting)
  • 12 tablespoons milk, as needed for consistency

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lime zest, lime juice, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
