Description

Strawberry Crunch Cheesecake Bites combine creamy cheesecake, fresh strawberries, and a crunchy cookie topping into a perfectly portioned, no-fuss dessert ideal for parties and make-ahead treats.


Ingredients

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 cup graham cracker crumbs
  • 4 tbsp butter, melted
  • 1/2 cup chopped strawberries
  • 2 tbsp strawberry gelatin (Jell-O) powder
  • 10 Golden Oreo or shortbread cookies
  • 1/4 cup freeze-dried strawberries
  • 1/2 cup white chocolate chips (optional, for coating)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a mini muffin tin with liners or lightly grease it.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of each muffin cup to form the crust.
  3. In a bowl, blend cream cheese, granulated sugar, eggs, sour cream, and vanilla extract until smooth and creamy.
  4. Spoon the cheesecake mixture over the crusts and bake for 18–20 minutes or until set. Let cool completely and refrigerate for at least 2 hours.
  5. In a food processor, pulse Golden Oreos, freeze-dried strawberries, and strawberry gelatin powder until crumbly.
  6. If using, melt white chocolate chips and dip the tops or sides of the chilled cheesecake bites.
  7. Roll the dipped bites in the strawberry crunch mixture to coat.
  8. Store in the refrigerator until ready to serve.

Notes

  • Use silicone molds or paper liners for easy removal.
  • Can be made ahead and taste better after chilling overnight.
  • Freeze well for up to a month.
  • White chocolate coating is optional but adds a nice touch.
  • Variations include using different berries or adding cocoa powder or lemon zest.
