Ingredients

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, cream the vegan butter and granulated sugar until light and fluffy.
- Mix in the strawberry puree, plant-based milk, vanilla extract, and strawberry extract if using.
- Add the pink food coloring if desired and mix until evenly blended.
- Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each dough ball in granulated sugar and place on the prepared baking sheet.
- Gently flatten each cookie slightly with your fingers or the bottom of a glass.
- Bake for 10–12 minutes until the edges are set and the bottoms are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
