Instructions

  1. Preheat the oven to 325 °F (163 °C).
  2. Line a 13×9-inch baking dish with parchment paper, leaving overhang on the sides for easy lifting.
  3. In a large bowl, whisk together flour, powdered sugar, cornstarch, and salt. Stir in melted butter and vanilla until just combined.
  4. Press the mixture evenly into the prepared pan and bake for 18–22 minutes, until edges are lightly golden.
  5. In another bowl, whisk eggs and granulated sugar until smooth. Add flour and whisk again until no lumps remain.
  6. Gently mix in the lemon juice, half and half, and lemon zest.
  7. Pour the filling over the hot crust (strain through a sieve if desired), and return to the oven.
  8. Bake for 18–22 more minutes, until the center is nearly set.
  9. Let cool at room temperature completely, then chill in the refrigerator for at least 4 hours until firm.
  10. Use parchment overhang to lift the bars from the pan, cut into squares, and dust with powdered sugar before serving.
