Description
A delicate Japanese-inspired dessert featuring whole juicy peaches wrapped in soft, chewy mochi dough for a refreshing and elegant treat.
Ingredients
- 4 small fresh peaches, peeled
- 1 cup glutinous rice flour
- 1/4 cup granulated sugar
- 3/4 cup water
- 1/2 cup cornstarch or potato starch (for dusting)
- 1/2 cup red bean paste or white bean paste (optional)
Instructions
- Carefully peel the peaches, keeping them whole and smooth. Optionally soak briefly in light sugar syrup, then pat dry.
- In a microwave-safe bowl, mix glutinous rice flour, sugar, and water until smooth.
- Microwave for 1 minute, stir, then heat for another 1–2 minutes until thick and slightly translucent.
- Dust a work surface generously with cornstarch and transfer the hot dough onto it.
- Allow the dough to cool slightly, then divide into 4 equal portions.
- Flatten each portion into a round disc.
- If using bean paste, spread a thin layer over each disc.
- Place a whole peach in the center and wrap the dough around it, sealing at the bottom.
- Lightly dust each mochi with starch and let rest for a few minutes before serving.
Notes
- Use plenty of starch to prevent sticking while handling mochi.
- Fresh peaches are recommended for best texture and flavor.
- Mochi is best enjoyed fresh for optimal softness and chewiness.
- Handle the dough while warm for easier shaping.
- Optional fillings like whipped cream or custard can enhance flavor.
