Description

Amaya’s Migas is a quick and flavorful Tex-Mex breakfast dish made with crispy tortilla pieces, fluffy scrambled eggs, fresh vegetables, spicy jalapeños, and melted cheddar cheese. This easy skillet recipe comes together in just 15 minutes and delivers a delicious balance of crunchy, creamy, and savory textures.


Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups tortilla pieces or crushed tortilla chips
  • 1/2 cup chopped tomato
  • 2/3 cup chopped onion
  • 1 jalapeño chile, seeded and chopped
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped cilantro for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the tortilla pieces to the skillet and cook for 1 to 2 minutes until slightly crispy.
  3. Stir in the chopped tomato, onion, and jalapeño. Cook for about 5 minutes until the vegetables soften.
  4. In a small bowl, whisk the eggs with salt and black pepper.
  5. Pour the eggs into the skillet and gently stir everything together with a spatula while the eggs cook.
  6. Once the eggs are partially set, sprinkle the cheddar cheese over the top and continue stirring until the cheese melts completely.
  7. Garnish with chopped cilantro if desired and serve warm.
