Description
A creamy, fresh, and satisfying chicken salad made with tender chicken, crunchy celery, sweet grapes, and a flavorful dressing. Perfect for sandwiches, wraps, crackers, or meal prep lunches.
Ingredients
- 4 cups cooked chicken breast, shredded or diced
- 1 cup celery, finely chopped
- 1 cup red seedless grapes, halved
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh parsley, chopped
- 1/4 cup red onion, finely diced
- 1/2 cup sliced almonds or chopped pecans
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the cooked chicken into a large mixing bowl.
- Add the celery, grapes, red onion, parsley, and almonds.
- In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, salt, and black pepper until smooth.
- Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
- Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to blend.
- Serve chilled on sandwiches, croissants, lettuce wraps, or with crackers.
Notes
- Rotisserie chicken works great for added flavor and convenience.
- For a lighter version, replace part of the mayonnaise with plain Greek yogurt.
- You can substitute grapes with diced apples or dried cranberries for a sweeter variation.
- Walnuts or pecans add extra crunch and richness.
- Fresh dill or curry powder can be added for different flavor profiles.
- Store in an airtight container in the refrigerator for up to 4 days.
- Do not freeze, as the mayonnaise dressing may separate after thawing.
- Make sure the chicken is fully cooled before mixing to prevent excess moisture.
