Ingredients
- 2 pounds Yukon Gold or red potatoes, cut into chunks
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/4 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss potato chunks with olive oil, melted butter, garlic, salt, pepper, paprika, Italian seasoning, and onion powder until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet without overcrowding.
- Bake for 35–40 minutes, flipping halfway through cooking for even crispiness.
- During the last few minutes of baking, sprinkle parmesan cheese over the potatoes.
- Return to the oven until the cheese melts slightly.
- Top with fresh parsley and serve hot.
