Ingredients
- 2 cups broccoli florets, finely chopped
- 1 cup sweet corn kernels

- 1/2 teaspoon garlic powder
- 3 large eggs
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 tablespoon olive oil
- 2 tablespoons chopped green onions
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking pan.
- Heat the olive oil in a skillet over medium heat and sauté the chopped broccoli for 3 to 4 minutes until slightly tender.
- In a large mixing bowl, combine the flour, baking powder, salt, black pepper, and garlic powder.
- In another bowl, whisk together the eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the broccoli, corn, shredded cheddar cheese, and green onions.
- Spread the mixture evenly into the prepared baking pan.
- Bake for 25 to 30 minutes until the top is golden and the center is set.
- Allow the bars to cool slightly before slicing into squares and serving warm.

- Frozen broccoli can be used if thawed and drained well.
