Description

Savory and comforting broccoli corn bars made with tender broccoli, sweet corn, cheddar cheese, and a soft golden crust. Perfect as a snack, side dish, or light meal.


Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup sweet corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking pan.
  2. Heat the olive oil in a skillet over medium heat and sauté the chopped broccoli for 3 to 4 minutes until slightly tender.
  3. In a large mixing bowl, combine the flour, baking powder, salt, black pepper, and garlic powder.
  4. In another bowl, whisk together the eggs, milk, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the broccoli, corn, shredded cheddar cheese, and green onions.
  7. Spread the mixture evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes until the top is golden and the center is set.
  9. Allow the bars to cool slightly before slicing into squares and serving warm.
