Description

Easy no-bake buckeye bars featuring a rich and creamy peanut butter base topped with a smooth chocolate layer, delivering the classic peanut butter and chocolate combination in a simple bar form.

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups creamy peanut butter
  • 2 teaspoons vanilla extract
  • 3 1/2 cups powdered sugar
  • For the chocolate layer:
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons peanut butter

Instructions

  1. Line a 9×13-inch baking dish with parchment paper for easy removal.
  2. In a large bowl, mix melted butter, peanut butter, and vanilla extract until smooth.
  3. Gradually add powdered sugar, stirring until a thick and creamy mixture forms.
  4. Press the peanut butter mixture evenly into the prepared baking dish and smooth the top.
  5. In a microwave-safe bowl, melt chocolate chips and peanut butter in short intervals, stirring between each until smooth.
  6. Pour the melted chocolate over the peanut butter layer and spread evenly.
  7. Refrigerate for about 2 hours, or until the chocolate layer is fully set.
  8. Lift the bars out using parchment paper and cut into squares before serving.

Notes

  • Regular creamy peanut butter works best for structure; natural peanut butter may result in a softer texture.
  • Let bars sit at room temperature briefly before slicing to prevent chocolate cracking.
  • Dark or milk chocolate can be used instead of semi-sweet.
  • Add crushed graham crackers or rice cereal for extra texture.
  • Sprinkle sea salt on top for a sweet and salty variation.
  • Store in an airtight container in the refrigerator for up to 1 week.
  • Freeze for up to 2 months and thaw before serving.
