Description
Easy no-bake buckeye bars featuring a rich and creamy peanut butter base topped with a smooth chocolate layer, delivering the classic peanut butter and chocolate combination in a simple bar form.
Ingredients
- 1 cup unsalted butter, melted
- 2 cups creamy peanut butter
- 2 teaspoons vanilla extract
- 3 1/2 cups powdered sugar
- For the chocolate layer:
- 2 cups semi-sweet chocolate chips
- 2 tablespoons peanut butter
Instructions
- Line a 9×13-inch baking dish with parchment paper for easy removal.
- In a large bowl, mix melted butter, peanut butter, and vanilla extract until smooth.
- Gradually add powdered sugar, stirring until a thick and creamy mixture forms.
- Press the peanut butter mixture evenly into the prepared baking dish and smooth the top.
- In a microwave-safe bowl, melt chocolate chips and peanut butter in short intervals, stirring between each until smooth.
- Pour the melted chocolate over the peanut butter layer and spread evenly.
- Refrigerate for about 2 hours, or until the chocolate layer is fully set.
- Lift the bars out using parchment paper and cut into squares before serving.
Notes
- Regular creamy peanut butter works best for structure; natural peanut butter may result in a softer texture.
- Let bars sit at room temperature briefly before slicing to prevent chocolate cracking.
- Dark or milk chocolate can be used instead of semi-sweet.
- Add crushed graham crackers or rice cereal for extra texture.
- Sprinkle sea salt on top for a sweet and salty variation.
- Store in an airtight container in the refrigerator for up to 1 week.
- Freeze for up to 2 months and thaw before serving.
