Description

A comforting one-skillet Caprese chicken gnocchi dish with juicy chicken, tender gnocchi, cherry tomatoes, melted mozzarella, and fresh basil for an Italian-inspired dinner.


Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 package (16 oz) potato gnocchi
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon balsamic glaze
  • 1 cup mozzarella cheese, shredded or sliced fresh mozzarella
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Season diced chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat and cook chicken for 5–6 minutes until golden and fully cooked. Remove and set aside.
  3. In the same skillet, add gnocchi and cook until lightly golden on the outside.
  4. Stir in garlic and cherry tomatoes, cooking until tomatoes soften and release juices.
  5. Pour in chicken broth and simmer for 2–3 minutes.
  6. Return chicken to the skillet and drizzle with balsamic glaze.
  7. Top with mozzarella cheese and let melt over low heat.
  8. Finish with fresh basil and Parmesan cheese before serving.

Notes

  • Fresh mozzarella gives the creamiest texture.
  • Frozen gnocchi can be used without thawing.
  • Add spinach or zucchini for extra vegetables.
  • Pesto adds extra flavor depth.
  • Reheat with a splash of broth to keep the dish moist.
