Description
A comforting one-skillet Caprese chicken gnocchi dish with juicy chicken, tender gnocchi, cherry tomatoes, melted mozzarella, and fresh basil for an Italian-inspired dinner.
Ingredients
- 1 lb boneless skinless chicken breasts, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1 package (16 oz) potato gnocchi
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tablespoon balsamic glaze
- 1 cup mozzarella cheese, shredded or sliced fresh mozzarella
- 1/4 cup fresh basil, chopped
- 2 tablespoons grated Parmesan cheese
Instructions
- Season diced chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat and cook chicken for 5–6 minutes until golden and fully cooked. Remove and set aside.
- In the same skillet, add gnocchi and cook until lightly golden on the outside.
- Stir in garlic and cherry tomatoes, cooking until tomatoes soften and release juices.
- Pour in chicken broth and simmer for 2–3 minutes.
- Return chicken to the skillet and drizzle with balsamic glaze.
- Top with mozzarella cheese and let melt over low heat.
- Finish with fresh basil and Parmesan cheese before serving.
Notes
- Fresh mozzarella gives the creamiest texture.
- Frozen gnocchi can be used without thawing.
- Add spinach or zucchini for extra vegetables.
- Pesto adds extra flavor depth.
- Reheat with a splash of broth to keep the dish moist.
