Description

Creamy, cheesy, and packed with seasoned beef, these Cheesy Beef Tortilla Pinwheels make the perfect quick appetizer, party snack, or easy lunch. Soft flour tortillas are filled with a flavorful mixture of beef, cream cheese, cheddar, Monterey Jack, and green chilies, then rolled and sliced into delicious bite-sized pinwheels.

Ingredients

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (4 ounces) diced green chilies, drained
  • 2 tablespoons chopped green onions
  • 4 large flour tortillas

Instructions

  1. Cook the ground beef in a large skillet over medium heat until fully browned. Drain any excess grease.
  2. Stir in the garlic powder, onion powder, chili powder, smoked paprika, salt, and black pepper. Let the beef cool slightly.
  3. In a large mixing bowl, combine the softened cream cheese and sour cream until smooth.
  4. Add the cheddar cheese, Monterey Jack cheese, diced green chilies, green onions, and seasoned beef. Stir until fully combined.
  5. Spread the mixture evenly over each flour tortilla, leaving a small border around the edges.
  6. Tightly roll each tortilla into a log shape and wrap each roll in plastic wrap.
  7. Refrigerate for at least 1 hour to firm up for easier slicing.
  8. Remove the plastic wrap and slice each tortilla roll into 1-inch pinwheels before serving.

Notes

  • For extra spice, substitute pepper jack cheese for cheddar.
  • Add chopped jalapeños, black olives, or diced tomatoes for extra flavor and texture.
  • Ground turkey can be used instead of ground beef for a lighter option.
  • Serve chilled or slightly warmed for melty cheese goodness.
  • Roll tortillas tightly and chill thoroughly to prevent pinwheels from falling apart.
  • Rolled tortillas can be frozen before slicing for up to 1 month.
