Description

A hearty and comforting one-dish casserole made with savory ground beef, tender rice, and a rich, melty cheese topping—perfect for easy family dinners.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Cook the diced onion until softened.
  3. Add the minced garlic and cook for about 1 minute.
  4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  5. Stir in salt, pepper, paprika, and oregano.
  6. Mix in the uncooked rice, beef broth, and drained diced tomatoes. Stir well and let simmer for a few minutes.
  7. Transfer the mixture into a greased baking dish and cover tightly with foil.
  8. Bake for 30 minutes.
  9. Remove foil, sprinkle cheddar and mozzarella cheese on top.
  10. Bake uncovered for another 10–15 minutes until cheese is melted and bubbly.
  11. Let rest for a few minutes before serving.

  • Add vegetables like bell peppers, peas, or corn for extra nutrition.
  • Ground turkey can be used as a lighter alternative.
  • Add chili flakes or use pepper jack cheese for a spicy kick.
  • Ensure rice is tender before adding cheese topping.
