Description

A comforting homemade dinner featuring juicy cheesy meatloaf paired with buttery creamy mashed potatoes for a hearty and satisfying family meal.

Ingredients

  • 2 pounds ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 3/4 cup warm milk
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
  2. In a large bowl, combine the ground beef, cheddar cheese, breadcrumbs, eggs, onion, garlic, milk, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning until evenly mixed.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. Bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Meanwhile, place the potatoes in a large pot of salted water and boil for 15 to 20 minutes until fork tender.
  6. Drain the potatoes and mash them with butter, warm milk, sour cream, salt, and pepper until smooth and creamy.
  7. Allow the meatloaf to rest for a few minutes before slicing.
  8. Serve the cheesy meatloaf alongside the creamy mashed potatoes.

Notes

  • Do not overmix the meat mixture to keep the meatloaf tender.
  • Swap cheddar cheese with mozzarella or pepper jack for a flavor variation.
  • Ground turkey can be used instead of beef for a lighter option.
  • Add chopped parsley or sautéed mushrooms for extra flavor and texture.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze individual portions for up to 3 months.
  • Add a splash of milk when reheating mashed potatoes to maintain creaminess.
