Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, thinly sliced
  • 1 packet ranch seasoning mix (1 ounce)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 4 large flour tortillas
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onions and bell peppers and cook for 5–6 minutes until slightly softened but still crisp.
  3. Stir in the shredded chicken, garlic powder, salt, black pepper, ranch seasoning mix, and ranch dressing. Cook for another 3–4 minutes until heated through.
  4. Warm the tortillas slightly to make them easier to fold.
  5. Divide the chicken mixture evenly among the tortillas and top each with cheddar and mozzarella cheese.
  6. Fold the sides inward and roll each tortilla tightly into a burrito.
  7. Place the burritos seam-side down in a skillet or grill pan and toast for 2–3 minutes per side until golden and crispy.
  8. Garnish with fresh parsley if desired and serve warm.
