Description

A refreshing no-cook watermelon salsa made with juicy watermelon, crisp vegetables, fresh herbs, and zesty lime, perfect as a light appetizer or summer side dish.

Ingredients

  • 4 cups watermelon, diced into small cubes
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and finely minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the diced watermelon in a large mixing bowl.
  2. Add the cucumber, red onion, jalapeño, and cilantro.
  3. In a small bowl, mix lime juice, lime zest, salt, and black pepper.
  4. Pour the dressing over the watermelon mixture.
  5. Gently toss everything until evenly coated.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  7. Serve chilled as a dip, side dish, or topping.

Notes

  • Best served fresh within 24 hours for optimal texture and flavor.
  • Watermelon releases liquid over time, so stir before serving leftovers.
  • Optional additions include mango, mint, avocado, or feta cheese.
  • Adjust jalapeño amount to control spice level.
  • Do not freeze, as the texture becomes watery after thawing.
