Ingredients
- 1 large head romaine lettuce, chopped
- 1 cup croutons
- 1/2 cup Parmesan cheese, grated
- 2 garlic cloves, minced
- 3 anchovy fillets or 1 tsp anchovy paste
- 1 egg yolk
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/3 cup olive oil
- 1 tsp Worcestershire sauce
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Wash, dry, and chop the romaine lettuce into bite-sized pieces and place in a large bowl.
- In a separate bowl, mash garlic and anchovies into a smooth paste.
- Add egg yolk, lemon juice, Dijon mustard, and Worcestershire sauce; whisk until combined.
- Slowly drizzle in olive oil while whisking continuously until the dressing emulsifies and becomes creamy.
- Season the dressing with salt and black pepper to taste.
- Pour dressing over the lettuce and toss to coat evenly.
- Add croutons and Parmesan cheese, tossing lightly.
- Top with additional Parmesan cheese and serve immediately.
