Ingredients
- For the crust:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- For the cream cheese frosting:
- 225 g cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- For the topping:
- 1 cup strawberries, sliced
- 1 kiwi, peeled and sliced
- 1/2 cup blueberries
- 1/2 cup mandarin orange segments
- 1/2 cup grapes, halved
Instructions
- Preheat oven to 175°C (350°F) and lightly grease a pizza pan or round baking tray.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Mix in egg and vanilla extract.
- Gradually add dry ingredients and mix until a soft dough forms.
- Press dough evenly onto the prepared pan into a large round crust.
- Bake for 12–15 minutes until lightly golden around the edges. Let cool completely.
- For the frosting, beat cream cheese and butter until smooth.
- Gradually mix in powdered sugar and vanilla extract until creamy.
- Spread frosting evenly over the cooled crust.
- Arrange fruit on top in colorful patterns.
- Chill for about 30 minutes before slicing and serving.
