Description

Ingredients
- 2 cups cottage cheese
- 2 large eggs
- 1/4 cup olive oil
- 2 tablespoons honey
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon dried herbs (optional)
- 1/4 cup grated parmesan cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
- Mix the cottage cheese, eggs, olive oil, and honey in a large bowl until combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and optional herbs.
- Slowly add the dry ingredients into the wet mixture and stir until a thick batter forms.
- Fold in the parmesan cheese if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
- Do not overmix the batter to avoid a dense texture.
- Low-fat cottage cheese works well in this recipe.
- For a heartier loaf, replace part of the all-purpose flour with whole wheat flour.
- Add shredded cheddar cheese and chopped chives for a savory variation.
- Mix in raisins or dried cranberries for a sweeter loaf.
- Store in an airtight container at room temperature for up to 3 days.
- Refrigerate for up to 1 week or freeze individual slices for longer storage.
- Toast slices or warm in the oven at 300°F (150°C) before serving.
