Description

Ingredients

  • 2 cups cottage cheese
  • 2 large eggs
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon dried herbs (optional)
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  2. Mix the cottage cheese, eggs, olive oil, and honey in a large bowl until combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and optional herbs.
  4. Slowly add the dry ingredients into the wet mixture and stir until a thick batter forms.
  5. Fold in the parmesan cheese if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
