Description

A rich and creamy homemade blueberry ice cream made with fresh blueberries, silky custard, and a hint of vanilla for a refreshing frozen dessert.


Ingredients

  • 2 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Place the blueberries, half of the sugar, and lemon juice in a saucepan over medium heat. Cook for 8 to 10 minutes until the blueberries soften and release their juices.
  2. Blend the blueberry mixture until smooth, then let it cool completely.
  3. In another saucepan, combine the heavy cream, milk, and salt. Heat gently until warm but not boiling.
  4. In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy.
  5. Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking constantly. Gradually whisk in the remaining cream mixture.
  6. Return the mixture to the saucepan and cook over low heat, stirring continuously, until the custard thickens enough to coat the back of a spoon.
  7. Remove the custard from the heat and stir in the vanilla extract and cooled blueberry puree.
  8. Cover and chill the mixture in the refrigerator for at least 4 hours or until completely cold.
  9. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  10. Transfer the churned ice cream to a container and freeze for 3 to 4 hours before serving.

Notes

  • Frozen blueberries can be used without thawing.
  • For extra texture, add crushed graham crackers or cookie pieces.
  • White chocolate chips pair well with the blueberry flavor.
  • Add lemon zest for a brighter citrus taste.
  • Replace part of the milk with extra cream for a richer texture.
  • Swirl blueberry jam into the ice cream for extra fruit flavor.
  • Store in an airtight container with plastic wrap pressed onto the surface to prevent ice crystals.
  • Let the ice cream sit at room temperature for 5 minutes before scooping.
