Description

A comforting and flavorful slow cooker chicken recipe made with tender chicken breasts simmered in a creamy honey mustard sauce. This easy crockpot meal is rich, tangy, slightly sweet, and perfect for serving over rice, mashed potatoes, or vegetables.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup honey
  • 1/3 cup Dijon mustard
  • 1/4 cup whole grain mustard
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Fresh parsley, for garnish

Instructions

  1. Lightly grease the crockpot with olive oil to prevent sticking.
  2. In a medium bowl, whisk together the honey, Dijon mustard, whole grain mustard, chicken broth, garlic, paprika, thyme, salt, and black pepper until smooth.
  3. Place the chicken breasts into the crockpot and pour the honey mustard mixture over the chicken.
  4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender and fully cooked.
  5. About 20 minutes before serving, stir in the heavy cream.
  6. In a small bowl, mix the cornstarch and water together to create a slurry, then stir it into the crockpot.
  7. Cook for another 15 to 20 minutes until the sauce becomes creamy and slightly thickened.
  8. Garnish with fresh parsley before serving.

Notes

  • Boneless chicken thighs can be used instead of chicken breasts for extra tenderness.
  • Add a tablespoon of yellow mustard for a sharper mustard flavor.
  • Mushrooms or baby potatoes can be added to make it a complete one-pot meal.
  • Add cayenne pepper or red pepper flakes for a spicy variation.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 2 months in a freezer-safe container.
  • Reheat gently on the stovetop or microwave while stirring occasionally to maintain the creamy texture.
