Ingredients

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 1/2 cups chicken broth
- 1/2 cup tomato sauce
- 1/2 cup heavy cream
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add chopped onion and cook until softened and translucent.
- Stir in garlic and cook briefly until fragrant.
- Add rice and toast for 1–2 minutes, stirring frequently.
- Pour in chicken broth and tomato sauce.
- Add paprika, cumin, oregano, chili powder, salt, and black pepper, then mix well.
- Bring to a gentle simmer, cover, and cook on low heat for 15–18 minutes until rice is tender and liquid is absorbed.
- Reduce heat and stir in heavy cream and shredded cheese.
- Mix until cheese is melted and the dish becomes creamy.
- Garnish with fresh cilantro and serve warm.
