Description

Ingredients

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/2 cup heavy cream
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add chopped onion and cook until softened and translucent.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add rice and toast for 1–2 minutes, stirring frequently.
  5. Pour in chicken broth and tomato sauce.
  6. Add paprika, cumin, oregano, chili powder, salt, and black pepper, then mix well.
  7. Bring to a gentle simmer, cover, and cook on low heat for 15–18 minutes until rice is tender and liquid is absorbed.
  8. Reduce heat and stir in heavy cream and shredded cheese.
  9. Mix until cheese is melted and the dish becomes creamy.
  10. Garnish with fresh cilantro and serve warm.
