Description

A creamy, refreshing cucumber salad loaded with crisp cucumbers, red onion, fresh dill, and savory everything bagel seasoning. This quick and flavorful side dish is perfect for lunches, summer dinners, picnics, or casual gatherings.

Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons everything bagel seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Wash and thinly slice the cucumbers and red onion.
  2. In a large mixing bowl, whisk together the Greek yogurt, cream cheese, lemon juice, olive oil, garlic powder, salt, and black pepper until smooth and creamy.
  3. Stir in the everything bagel seasoning and fresh dill.
  4. Add the sliced cucumbers and onions to the bowl and toss gently until evenly coated.
  5. Chill the salad for 15 to 20 minutes before serving to allow the flavors to blend.
  6. Finish with an extra sprinkle of everything bagel seasoning before serving.

Notes

  • For extra creaminess, add sliced avocado.
  • Crumbled feta cheese adds a delicious salty flavor.
  • Add smoked salmon or grilled chicken for extra protein.
  • To increase crunch, mix in toasted sunflower seeds or chopped celery.
  • Fresh chives or parsley can be used instead of dill.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Stir before serving again as cucumbers may release liquid over time.
  • This salad is best served cold and should not be reheated.
