Description
Light, fresh cucumber sandwiches with a creamy herb spread, perfect for tea time, snacks, or quick gatherings.
Ingredients
- 1 large cucumber, thinly sliced
- 8 slices soft white or whole wheat bread
- 120 g cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter, softened (optional)
Instructions
- Wash the cucumber thoroughly and slice it into very thin rounds. Pat dry with a paper towel to remove excess moisture.
- In a bowl, mix the softened cream cheese, mayonnaise, dill, lemon juice, salt, and pepper until smooth.
- Spread a thin layer of butter on each slice of bread if using.
- Spread the cream cheese mixture evenly over all slices of bread.
- Arrange cucumber slices over half of the bread slices, slightly overlapping.
- Top with the remaining bread slices to form sandwiches.
- Gently press together, trim crusts if desired, and cut into halves or quarters before serving.
Notes
- Pat cucumbers dry to prevent soggy sandwiches.
- Best served fresh for optimal texture and flavor.
- Butter acts as a moisture barrier for longer freshness.
- Can customize with herbs like chives or parsley.
- Add smoked salmon for a richer variation.
