Description
Homemade vanilla wafers with crisp edges, lightly soft centers, and rich buttery vanilla flavor, perfect for snacks, dessert platters, pudding, or ice cream.
Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon pure vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons milk
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter and sugar together in a mixing bowl until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing gently.
- Stir in the milk until the dough is smooth and slightly soft.
- Drop small spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Notes
- Store vanilla wafers in an airtight container at room temperature for up to 1 week.
- Refresh the cookies in a warm oven for a few minutes if they lose crispness.
- Freeze in a sealed container for up to 2 months.
- Chill the dough briefly if it feels too warm or spreads too much.
- For extra crispy wafers, bake 1 to 2 minutes longer until the edges are deeper golden.
- Optional variations include cinnamon, lemon zest, chocolate dipping, or almond extract.
