Description

Homemade vanilla wafers with crisp edges, lightly soft centers, and rich buttery vanilla flavor, perfect for snacks, dessert platters, pudding, or ice cream.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and sugar together in a mixing bowl until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently.
  6. Stir in the milk until the dough is smooth and slightly soft.
  7. Drop small spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

  • Store vanilla wafers in an airtight container at room temperature for up to 1 week.
  • Refresh the cookies in a warm oven for a few minutes if they lose crispness.
  • Freeze in a sealed container for up to 2 months.
  • Chill the dough briefly if it feels too warm or spreads too much.
  • For extra crispy wafers, bake 1 to 2 minutes longer until the edges are deeper golden.
  • Optional variations include cinnamon, lemon zest, chocolate dipping, or almond extract.
