Description

A quick and flavorful taco salad loaded with seasoned ground beef, crunchy Doritos, fresh vegetables, cheese, beans, and creamy Catalina dressing. Perfect for busy weeknights, potlucks, or casual family dinners.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 head romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 1/2 cup sliced black olives
  • 1 bag (9.25 ounces) Nacho Cheese Doritos, slightly crushed
  • 1 cup Catalina dressing
  • 1/4 cup sour cream
  • 1 avocado, diced
  • 2 green onions, sliced

Instructions

  1. Cook the ground beef in a large skillet over medium heat until fully browned. Drain excess grease.
  2. Add taco seasoning mix and water to the skillet. Stir well and simmer for about 5 minutes until the meat is evenly coated. Let cool slightly.
  3. In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, cheddar cheese, mozzarella cheese, black beans, corn, black olives, avocado, and green onions.
  4. Add the cooled taco meat to the salad mixture and gently toss to combine.
  5. Right before serving, stir in the crushed Doritos to keep them crunchy.
  6. Drizzle Catalina dressing over the salad and top with spoonfuls of sour cream before serving.
