Description
A quick and flavorful taco salad loaded with seasoned ground beef, crunchy Doritos, fresh vegetables, cheese, beans, and creamy Catalina dressing. Perfect for busy weeknights, potlucks, or casual family dinners.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 head romaine lettuce, chopped
- 2 cups cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup canned corn, drained
- 1/2 cup sliced black olives
- 1 bag (9.25 ounces) Nacho Cheese Doritos, slightly crushed
- 1 cup Catalina dressing
- 1/4 cup sour cream
- 1 avocado, diced
- 2 green onions, sliced
Instructions
- Cook the ground beef in a large skillet over medium heat until fully browned. Drain excess grease.
- Add taco seasoning mix and water to the skillet. Stir well and simmer for about 5 minutes until the meat is evenly coated. Let cool slightly.
- In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, cheddar cheese, mozzarella cheese, black beans, corn, black olives, avocado, and green onions.
- Add the cooled taco meat to the salad mixture and gently toss to combine.
- Right before serving, stir in the crushed Doritos to keep them crunchy.
- Drizzle Catalina dressing over the salad and top with spoonfuls of sour cream before serving.
