- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (Italian-style preferred)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 2 tablespoons olive oil
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh basil, chopped (optional)
Instructions
- Slice chicken breasts in half lengthwise to create thin cutlets and season with salt and pepper.
- Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning.
- Dredge chicken in flour, dip in eggs, and coat with breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a skillet over medium heat and cook chicken for 4–5 minutes per side until golden and crispy.
- Preheat oven to 375°F (190°C).
- Transfer chicken to a baking dish, spoon marinara sauce over each piece, and top with mozzarella cheese.
- Bake for 15–20 minutes until cheese is melted and bubbly and chicken is fully cooked.
- Garnish with fresh basil if desired and serve hot.
Notes
- Use panko breadcrumbs for extra crispiness.
- Bake instead of frying for a lighter version.
- Chicken thighs can be used for juicier results.
- Add provolone cheese for extra richness.
- Let breaded chicken rest briefly before cooking to help coating stick.
