Ingredients
- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into chunks
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup pineapple juice (for glaze)
- ¼ cup low-sodium soy sauce (for glaze)
- 3 tablespoons brown sugar (for glaze)
- 2 tablespoons ketchup (for glaze)
- 2 cloves garlic, minced (for glaze)
- 1 tablespoon fresh ginger, grated (for glaze)
- 1 tablespoon cornstarch (for glaze)
- 2 tablespoons water (for glaze)
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a small saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Bring the mixture to a gentle simmer over medium heat.
- In a small bowl, whisk cornstarch and water together, then stir into the sauce.
- Cook for 2–3 minutes until the glaze thickens, then remove from heat and let cool slightly.
- In a large bowl, toss chicken with olive oil, salt, and black pepper.
- Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients.
- Brush kabobs generously with the Hawaiian glaze.
- Grill over medium-high heat for 10–12 minutes, turning occasionally and brushing with more glaze.
- Cook until chicken reaches an internal temperature of 165°F (74°C).
- Serve warm with remaining glaze drizzled on top.
