Description

Refreshing and naturally sweet pineapple mint popsicles made with simple ingredients, perfect for a light and cooling treat.


Ingredients

  • 2 cups fresh pineapple chunks
  • 1/4 cup fresh mint leaves
  • 1/2 cup water or coconut water
  • 23 tablespoons honey or sugar (optional)
  • 1 tablespoon lime juice

Instructions

  1. Add pineapple chunks, mint leaves, and water (or coconut water) into a blender.
  2. Blend until the mixture is completely smooth.
  3. Taste the mixture and add honey or sugar if extra sweetness is needed.
  4. Add lime juice and blend briefly to combine.
  5. Pour the mixture into popsicle molds.
  6. Freeze for 4 to 6 hours or until fully solid.
  7. Run molds under warm water for a few seconds to release popsicles easily.
