Description

A simple, fresh, and flexible everyday salad made with crisp romaine, tomatoes, cucumber, red onion, and carrots tossed in a light lemon-olive oil dressing. Perfect as a quick side dish or a light meal.


Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry all the vegetables thoroughly.
  2. Chop the romaine lettuce and place it in a large bowl.
  3. Add the cherry tomatoes, cucumber slices, red onion, and shredded carrots on top of the lettuce.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
  5. Pour the dressing over the salad just before serving.
  6. Toss gently until all the vegetables are evenly coated, then serve immediately.

Notes

  • For best freshness, add the dressing just before serving.
  • You can add grilled chicken, tuna, chickpeas, beans, or eggs to make it more filling.
  • Nuts or seeds can be added for extra crunch.
  • Swap lemon juice with vinegar or add mustard for a different dressing flavor.
  • Feta or parmesan cheese can be added for a richer taste.
