Ingredients
- 12 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1 cup diced cucumber
- 1/2 cup finely diced red onion
- 1 avocado, diced
- 1/2 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 garlic clove, minced
- 1 tablespoon olive oil

- 1/4 teaspoon black pepper
- 1/2 teaspoon chili powder
Instructions
- Cook the rotini pasta according to package directions until tender. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooled pasta, cherry tomatoes, corn, cucumber, red onion, avocado, and chopped cilantro.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, garlic, olive oil, salt, black pepper, and chili powder until smooth and creamy.
- Pour the creamy cilantro lime dressing over the pasta mixture and toss until everything is evenly coated.
- Refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to blend.
- Stir gently before serving and add a splash of lime juice or a spoonful of yogurt if needed to refresh the dressing.
