Ingredients
- 2 large ripe mangoes (about 2 cups), peeled and diced
- 1/2 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1 small jalapeño, finely chopped (seeds removed for less heat)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice (about 1 lime)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/2 avocado, diced
- Optional: 1 teaspoon honey
Instructions
- Peel and dice the mangoes into small, even cubes.
- In a large bowl, combine the mango, red onion, red bell pepper, and jalapeño.
- Add the chopped cilantro, lime juice, salt, and black pepper.
- Gently toss everything together until well combined.
- Taste and adjust seasoning, adding more lime juice or salt if needed.
- If using, gently fold in diced avocado just before serving.
- Let the salsa rest for 10–15 minutes to allow flavors to meld before serving.
Notes
- Use ripe but firm mangoes for the best texture.
- Adjust spice level by adding or removing jalapeño seeds.
- Add diced pineapple or papaya for extra sweetness and tropical flavor.
- Mix in cucumber or jicama for additional crunch.
- A squeeze of orange juice can enhance sweetness and citrus flavor.
- Store in an airtight container in the refrigerator for up to 2 days.
