Description

Sweet roasted corn coated in a rich garlic-herb butter and roasted until tender with lightly golden edges. This easy side dish is fresh, savory, buttery, and perfect for cookouts, family dinners, or quick weeknight meals.


Ingredients

  • 6 ears fresh corn, husks removed
  • 1/2 cup unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a baking sheet or roasting pan.
  2. In a small bowl, mix the melted butter, minced garlic, parsley, chives, thyme, salt, and black pepper until fully combined.
  3. Place the corn on the prepared baking sheet and brush the garlic-herb butter generously over each ear of corn.
  4. Roast the corn for 25 to 30 minutes, turning occasionally and brushing with extra butter during cooking.
  5. Once the corn is tender with slightly golden edges, remove it from the oven.
  6. Sprinkle Parmesan cheese on top if desired and serve warm with lemon wedges on the side.
