Description

Creamy, spicy jalapeno popper-inspired chickpea pinwheels wrapped in soft tortillas and sliced into bite-sized snacks, perfect for parties or quick meals.

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup cream cheese or dairy-free alternative
  • 1/2 cup shredded cheddar cheese or dairy-free cheese
  • 23 jalapenos, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp green onions, chopped
  • 4 large flour tortillas or wraps

Instructions

  1. Mash the chickpeas in a bowl until mostly smooth, leaving a few chunks for texture.
  2. Add cream cheese, shredded cheese, chopped jalapenos, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Spread the mixture evenly over each tortilla, reaching the edges.
  4. Sprinkle chopped green onions on top.
  5. Roll each tortilla tightly into a log.
  6. Refrigerate for 30 minutes to firm up.
  7. Slice into pinwheels and serve.

Notes

  • Adjust jalapenos for desired spice level.
  • Use dairy-free alternatives to make it vegan.
  • Chilling helps achieve cleaner slices.
  • Add smoked paprika for a smoky flavor variation.
  • Best served cold or slightly at room temperature.
