Ingredients
- 2 1/4 cups all-purpose flour

- 1 large egg
- 1 tablespoon lemon zest

Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract; mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the white chocolate chips evenly.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10–12 minutes until edges are lightly golden.
- Let cookies cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
