Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken pieces with oregano, paprika, basil, salt, black pepper, and red pepper flakes.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 6 to 8 minutes until golden brown and fully cooked.
  4. Remove the chicken from the skillet and set aside.
